This is the world's best lasagna. I wont lie, its not inexpensive and you will need to plan out the time, but it's fucking delicious. you'll need:
1) Gardein beefless crumbles, I package
Canned tomatoes, 2 pounds ( i like to use 1 can ground and 1 can small diced)
fresh oregano, about 3 sprigs
Basil, about 5 leaves, chopped
Garlic, 6 cloves, minced
Shallot, 1 each, minced
Rosted red pepper, 1 each, diced
Red pepper flakes, 1 teaspoon
2) Kite Hill Ricotta, 1-2 packages
Parmela mozzarella, 1 package
Violife Parmasan, 1 package
Spinach, 1 pound (fresh or frozen)
Lasagna noodles
First, brown the crumbles in a large pot. Get as much browning and caramelization as you can, don't worry if they seem dried out. You want this flavor (called the fond) in the bottom of the pot, this will be the base for your sauce. Remove the crumbles and set aside. sweat the garlic and shallot in the fat from browning the crumbles. Deglaze with water, and quickly add the tomatoes, red pepper, red pepper flakes, basil, and oregano leaves. Simmer for about 20 minutes. Season with salt and pepper to taste after 20 minutes. Add crumbles and simmer for 10-15 minutes.
Cook your spinach and drain any excess water. Layer the lasagna in this order: 1) pasta 2) crumbles 3) spinach 4) ricotta 5) mozz 6) grated parm. Continue until you reach the last sheet of past on the top. Spread it with sauce, cover the top with aluminum foil. and bake at 375. Your baking time will vary depending on whather you cook noodles or use no-boil lasagna. Uncover when it is nearly done, top with mozzarella and grated parm, and bake until the top cheese is melted and starting to crisp and brown.
And now that we're at the end, if you don't feel like making your own sauce, you can just buy a jar of fra diavolo from the store.
